As passionate about fashion as he is pasta, designer Robert Rodriguez acquired his love of cooking from his mother, who taught him how to make Cuban dishes as a child. These days, when he’s not in the design studio, he’s sure to be in the kitchen trying new recipes—Italian food is his specialty. Here, he shares his favorite dish.
Robert’s Favorite Cookbook: “The Silver Spoon.” It has over 2,000 Italian recipes.
Robert’s Favorite Recipe: Linguine with Clams and Arugula
4 tablespoons olive oil
¼ cup finely chopped shallots
3 large garlic cloves; minced
24 small fresh clams (manila or little neck); scrubbed
3 cups of white wine (Pinot Grigio Santa Margherita)
½ pound linguine
3 cups baby arugula
Heat 4 tablespoons of olive oil in large deep skillet over medium heat. Add shallots and garlic; sauté until golden, about 5 minutes. Add 3 cups of white wine and baby clams. Bring to a boil and cover. Cook until clams open, about 15 minutes. Discard any clams that do not open. Add 3 cups of arugula. Cover skillet until arugula wilts and stir together.
Meanwhile, cook linguine in a large pot with salted water and one tablespoon of olive oil. Drain. In large bowl, combine linguine with the clam and arugula mixture and stir together. Serve and enjoy. Bon appétit!
